It’s important to have a relationship with your sushi guy in your town. Just as it is with a fishmonger..a butcher…or anyone feeding you really. For fishmongers…there’s very few in the US. Butchers…well butchers in NYC are awesome. Butchers in LA are weak. That said, KZO in LA is my favorite Sushi spot in LA. …

It’s very important to create a relationship with a few people: 1) your fishmonger 2) your butcher (real life, or online) 3) truffle dealer 4) wine dealer 5) your sushi restaurant. you get the best cuts. you’re served on time. that’s all. go drink.

3:30am hike for 13 hours, with a pack full of water (turns to ice quite rapidly in -20F). this view – the reward of strenuous work! managed to view two big mule deer and a spike elk, with some monster bedding and tracks.
