Colorado Lamb chops, over 3 pounds for the rack, fat cap on. (is there any other way?). See how the fat goes all the way to the top? I don’t understand why they’re ever cut without this. In a good healthy animal the fat is so tasty. #hearthealthy
simple seared in blue steel on all sides then roasted at 450F until ~ 130/135F in the center. rest, then cut
random thyme for basting. super sweet onions cooked for 30 min on low. healthy fatty soul-satisfying mess. 2000 Chateau Montelena Cabernet Sauvignon.
