I’ve added a few videos

I’ve added a few cooking videos specifically on beef for www.pursuitfarms.com and will continue to add recipes and blog about food, state of our industry and ways forward for those in need- i started in my early 20’s with Midnight Mission, then later St. Vincent Meals on Wheels, I’m looking forward to getting more into philanthropy and

Here are a few videos you may enjoy that we created.

This is an entire cook of a normal A5 on an electric stove airbnb: https://www.youtube.com/watch?v=0dGsi8D7_10 – salted ahead of time. it was about 4:45 and came out to medium rare. Extremely fatty cuts taste better medium. I recommend to push down the steak so there is full contact with the pan and that it gets completely seared!

(We had a lot of wine): medium hot pan, no oil method, the steak will render and then start frying/cooking in its own fat: https://www.youtube.com/watch?v=5Lbk9pSicuo

Olive tenderloin cooked in a Josper Grill/Oven combo fed to my 1 year old: cast iron griddle hot, for the sear, then moved to a cooler location to let the smoke flavor penetrate and also slowly cook/bake:

I recommend tasting the fat by itself and not introducing any of the other fats such as canola oil or butter. You can also save the olive beef fat for cooking, it is very tasty šŸ™‚

(Fat should melt around 90F as opposed to normal beef which melts at 131Farenheit) giving a melt in your mouth sensation.
